The kit contains:rennet tabletscitric acidcheese salt - I don't know what this ischeese clotha thermometerSupposedly this is all you need to make a lot of basic cheeses but the instructions are for mozzarella, so that's what we did. This is the first organized run I've done since 10th grade.  That's like 12 years!
